good hello guys this Gaza welcome back
to my youtube channel this is the third
episode in my hashtag Gaza's 15 minute
meals where I'm trying to make vegan
food is tasty as convenient and
accessible as I can for everyone at home
and hoping that you can make these
recipes for all your friends and family
and it will be amazing form of activism
that isn't going to take you hours on
end in the kitchen so this recipe is
probably the most flavoursome recipe
that I'm doing it in the Gaza's 15
minute meals series this is my spring
vegetable Jamaican inspired curry full
of the most amazing flavors scotch
bonnets garlic thyme I've even got some
amazing Jamaican curry powder that my
friend Christina bought for me from to
make a but I've checked you can get this
type of curry blend from all good
supermarkets so don't worry you're not
going to have to go to Jamaica to get
this but it is really nice and this and
if you're even even if you can't get
this Jamaican curry powder you can just
use any curry powder you come across and
the additional ingredients that I'm
going to add are going to help it make
it even more Caribbean esque for you I
hope that makes sense let's get straight
into it

so I want to make this meal as healthy
as possible and rather than serving it
with white rice I'm gonna make some
lovely lemon and coriander quinoa
so first up before I set my 15-minute
time I actually I have to do a 15 minute
timer to make this within the laws of
the Gaza's 15 minute meals I'm just
going to once I start the timer feel
this beautiful quinoa with some water to
every sort of cup of quinoa add double
the amount of water and a little bit of
salt and you just got to bring this to a
boil basically until it's cooked and it
takes about 10 to 12 minutes so
obviously this is the first thing I want
to get cooking before I start my curry
and even though this is a 15-minute
curry usually I would say 30 minutes is
like the minimum amount of time that
you'd need to make a really flavorful
curry but I've got a few little hacks of
how you can make this curry taste like
it's been cooking for 30 an hour that
long it will taste amazing promise you
first up for the curry we need to
prepare our base ingredients which are
scotch bonnet chilies which is so
important for this recipe they're very
spicy but not only are they spicy they
have the most amazing flavor which is so
prominent in Caribbean Jamaican food so
please get Scotch bonnets you can find
them now at supermarkets and it in think
in markets and things like that I've
just moved to London and these are at
Brixton market which is not far from my
house so I'm very lucky but you will
find these I promise and they really add
a nice of an authentic authentic flavor
to this Jamaican curry so and the spicy
so only if you don't like spicy food
don't add too much but are you gonna add
one and that should give them really
nice spice to this curry I'm also going
to add some spring onions and garlic
finely chop the spring onions finely
chop the scotch bonnet chilli oh my god
this doesn't smell like it the smell of
this is so incredible you honestly you
don't understand how good that smells
and be careful either wear gloves or
wash your hands straight after chopping
this you don't want to touch your eyes
or go to the toilet after touching this
finely chopped 5 cloves of garlic
guys if you're not the most confident
chopper and you think that you're
spending 15 minutes just chopping these
ingredients what I really recommend is
buying things like pureed garlic already
so then it will speed up your cooking
but for me I like using fresh garlic and
just obviously I've been cutting for
years and years and years so I'm pretty
fast at it but generally even with you
being quite a slow chopper you will have
this recipe done within 15 minutes but
the purees do help
I'm just roughly chopping this garlic
and if the cloves are too big and you
don't really want garlic you can then
always just pick it out I'm gonna get
this cooking now and when it's cooking
I'm gonna prepare the spring vegetables
free heat a large sauce pan or wok over
a medium heat add some coconut oil when
the pan is hot add the garlic chilli and
spring onion so my hack
for making a really bold and rich flavor
some curry in just 15 minutes is to not
add the liquids too soon okay so what
you want to do is cook this base with
all the spices for as long as you can
now I'm going to add the spices so they
have as much time in that pan roasting
caramelizing infusing so that this
vegetable curry is so flavorsome and
it's as tasty as a curry that you would
make over the space of an hour hour and
a half something like that
to the pan add some of the Jamaican
curry powder dry thyme ground ginger and
a bay leaf it's really important when
making a quick curry
obviously to roast these spices I'm
doing now but it's to add some salt at
early stage when I first became a chef
in the professional kitchens I was told
for season at every stage and that helps
add a really good base of flavor so
whilst the spices are roasting and
everything's getting nice and flavorsome
here I'm gonna prepare the spring
vegetables first up I'm gonna roughly
chop the red pepper add the pepper to
the pan once you've chopped it next chop
the fine beans and courgettes

I'm actually doing this in order of how
quick these vegetables cooks so first up
I put the pepper in I want that to cook
for a longer period then the fine Beno
then the courgette then the fine beans
next time they do the tender send
broccoli and I've then last I'll do the
asparagus because I want that to stay as
tender and as perfectly cooked as I can
so I want to add that but basically go
to the end remove the tough end bits of
asparagus then chop into three right so
all the veggies in is catching the back
of my throat so I may choke in a second
but that's just the spices roasting and
everything's been coated in that amazing
spice mix and it smells so good now I
need to add some liquid but before I do
and add some chickpeas this is a great
source of protein and these are just
cooked from a can making everything more
convenient and the liquid I'm going to
add is in coconut milk and that's going
to add a real real creaminess but don't
worry if you don't like coconut you
won't taste the coconut it's just gonna
add a really nice creaminess add a can
of coconut milk

next add a cup of water

tomato puree and give it a good mix up

right so because I roasted those spices
with the base for so long already I have
to just add in those liquids this will
be flavorsome as how but what I need to
do is turn the heat up as quickly as
possible get this cooking get this
burbling thickening up and just lightly
cooking the vegetables and I'm literally
ready to serve so I'm going to give this
two minutes on here my time is nearly up
I'm just going to drain off my quinoa
add some lemons and coriander and server

so the cooked quinoa add some lemon
juice and some chopped coriander

guys look at this bubble away this is so
nutritious so creamy I don't want this
to cook any longer really cuz I want one
my vegetables to stay as nutritious as
crunchy and as flavorsome as possible
all in that amazing creamy sauce look at
that beautiful the one thing I'm going
to add it's just an agreement that I
found at the supermarket is one of my
favorite ingredients actually this is
samphire as a sea vegetable it's very
nutritious it's got a beautiful salty
flavor and add that now this doesn't
need much cooking at all I'm ready to
turn this off my quinoa is done I'm
ready to serve up my 15 minutes is over
so let's play

I am dying to taste this
it looks so creamy and so spicy and so
bold and rich and flavorsome I need to
prove all that by tasting it let's give
this a taste I need a shovel for this
that's I'll only use this massive spoon
so I need to get it all in my mouth
sorry before I eat this I just want to
say that this is great for meal prep
look how much I made there in 15 minutes
portion this up you've got the protein
in there you've got your nutrients in
there really really tasty I mean even
taste I haven't tasted really really
nutritious let's taste it that is
unbelievable you would never imagine
this is made in just 15 minutes
rich flavorsome everything I said before
it is honesty and please find Scotch
bonnets to make this because you can tap
honestly this has such a unique flavor
and it makes this curry this Jamaican
caribbean-inspired curry honestly
without them it won't taste as good so
please try and find them this is amazing
