hi everybody welcome to Willa's kitchen
oh my god you weigh so much see hi
everybody welcome to the show hey guys
it's little welcome back to my channel
today I am full on tick-tock girl and my
bleach dead t-shirt look like I just
went to summer camp today we have a very
informal not really Test Kitchen I feel
like this is gonna work perfectly but
we're gonna just try and make chicken
and waffles using the chicken recipe for
my last video so if you haven't watch
that you can go watch it but I am gonna
show you how to make the chicken in this
video anyway because we're making it in
like a little bit different shapes I'm
very excited I've been craving chicken
and waffles for a few days now if you
guys I mean I'm not really on a posting
schedule right now like I said I'm just
posting when I can we're not going to
the grocery store a whole lot but if you
guys want to keep up with all the other
stuff I'm doing I'm on tik-tok now it's
mostly coffee videos with a few dancing
videos dancing follow me it's Lafite my
podcast I'm so podcasting regularly the
only other thing I had to say was if you
guys have any like video requests or
anything that you want to see during
this time let me know but other than
that that's everything for now so let's
get into it so I don't have like half
the ingredients for this seitan you're
supposed to have chickpea flour and
nutritional yeast but I realized that in
my last video I have lots of questions
of people asking what you can do if you
don't have chickpea flour or you don't
have nutritional yeast so this is a
perfect learning opportunity for us both
I'm just gonna leave it out and I'm
gonna add a little bit of oil to help
make it a little bit more moist so if
you do have nutritional yeast and check
the flour add a tablespoon of each but
if you don't I'm just gonna wing it
one cup of vital wheat gluten
you cannot substitute this someone asked
if they could substitute this for
chickpea flour and I was like no you
will ruin it and it'll be a mess and
you'll waste your chickpea flour so
don't do that
so then we're adding in a broth and then
before I mix it I'm just gonna do a
little drizzle of oil and then you're
just going to stir it up until it forms
a dough you guys saw this in the last
video so it's gonna come together super
fast into a gelatinous dough this is why
you need gluten because gluten is
elasticy and stretchy so that's why a
different type of flour is not going to
work so you just want to knead it a few
times in the bowl like literally five or
six times just until all of the dry
ingredients are gone and then I think
what I want to do so last time we ripped
it into little patty shapes but I want
to do it just kind of like long shapes
like this so that it looks kind of like
a breaded chicken cutlet thing once it's
done it will so that's kind of the shape
I'm going for so I'm thinking we're
gonna get about four from this so you
can even like roll it yeah okay so there
we've got our little chicken ten DS just
add your broth like that
manual for 15 minutes and just like last
time for the batter for the chicken
we're gonna add breadcrumbs flour and
some smoked paprika that's a pepper okay
so then you just want to stir it up one
cup of milk or using oat milk and then
we want just a teaspoon to a tablespoon
of vinegar to make it like a buttermilk
and then just set that aside for a
second one cup of flour two tablespoons
of baking powder a tablespoon of sugar
or a handful so then just whisk that all
up and then before pouring in the liquid
we're just gonna add our oil if you want
to keep it oil for you can add a few
tablespoons of like apple sauce but the
oil just really helps it from keep it
from sticking to the waffle iron I'm
just gonna pour the wet into the dry
stir it up with a wooden spoon you want
it to be smooth with like some little
lumps it does you know not too lumpy but
you don't have to stir it until it's
completely smooth because you want to
have a couple lumps meaning that you
don't over mix it because if you over
mix it it'll get gummy and it'll be
weird so I'll actually believe this on I
do this with a lot of my pancake recipes
I leave the camera on for the whole time
that I'm stirring it just so you can see
exactly how long I stir it for because
the key is to not to over mix
the waffles okay so see it's like some
lumps small lumps and then where should
I stop that aside so I'm just putting a
bunch of coconut oil into the pan and
then I turn it on like medium ish heat
and then I'll let that melt and warm up
and while we're doing that I'll go get
the chicken so then you just want to
coat each one of them in the breadcrumb

we're gonna make the waffles and I'm so
excited because I dug out my little mini
baby waffle maker and I'll like this
boil because when I'd use this in videos
before I got like a million questions
asking where it's wrong

it's actually a lot better if you have
cooking spray but I don't have any thing
