welcome back to my youtube channel today
I'm gonna be making the most amazing
vegan schnitzels with beautiful slaw and
amazing herby buttery caper sauce it's
gonna be absolutely great just before we
get into the recipe I want to say a big

so let's get into my recipe
the schnitzels so now for the recipe I'm
gonna be using some extra firm tofu for
the schnitzel this is gonna have a nice
bite to it and once it's coated in the
amazing crispy panko bread crumb coating
this will be unbelievable and tastes
like a traditional schnitzel so let's
get making cut the tofu into some nice
thin fill it shapes give the tofu a good
pat dry with some kitchen paper right
these are tofu fill it's done now we
need to make the most amazing crispy
coating for this this is gonna be epic
add some panko breadcrumbs to a bowl in
another bowl add some chickpea flour
with a little bit of water and mix it in
till it's like an egg like consistency
don't worry if you can't get rid of all
of the lumps it's absolutely fine I've
also got another bowl with some plain
flour in which I'm going to add some
chicken seasoning to I've found some
chicken seasoning at the supermarket
hasn't got any chicken in it don't worry
it's got a good mixture of herbs and
spices and that will nicely flavor up
the schnitzels so if you can't get
chicken seasoning I just recommend
getting some mixed herbs some smoked
paprika some salt some pepper maybe some
garlic granules all into the mix with
the flour and you will have something
very similar also some sage as well as
dried sage that are really healthy so
now we need a dippy dip it's to each one
and then we'll get them cooking simple
as that

so this is tofu coated now I'm gonna
just have a little cleanup and we'll get
cooking so this recipe is actually so so
simple I was actually thinking about
putting it in the 15 minute season but I
thought having to coat the tofu it may
be a bit long-winded and you may not be
able to do it in the 15-minute timeframe
however it's nice to take your time with
it and we're gonna cook these now in
some oil then get them into the oven and
that will give me enough time to then
make the most amazing slaw and source of
civilization it's it's gonna be so so
good preheat a large nonstick frying pan
over a medium heat and add a few
tablespoons of oil fry the schnitzels
around 3 minutes on each side or until
they're nice and golden so guys if you
don't want to use any oil forget this
step just put them on a lined baking
tray and into the oven for about 20-25
minutes at 180 degrees Celsius they'll
come out nice and golden I like doing
this because you're going to get a
really really crisp coating on the
schnitzel and this is very almost
traditional as well I says almost
traditional because there's no meat in
this it's tofu but it still tastes just
as good that chicken seasoned then will
work really well and something else
that's going to add a nice flavor is the
amazing herb sauce that I'm going to
make just to finish it off it's so
simple but whilst this is cooking I'm
gonna add a touch of salt and pepper

guys guys guys look at this so so crisp
already haven't even been in the oven
and this is what's gonna be one of those
videos where I say crispy crisp and
other crisp related words several times
and I'll see loads of those comments
that you guys do say and take a shot
every time grad says Chris today's one
of those days because these are crisp
once they crisp and golden get them onto
a baking tray fry off the rest so now we
need to get these in the oven for about
10 to 15 minutes so the slaw that I'm
serving with the schnitzels I wanted it
to be really quite vibrant and sharp and
just cut through that bold sort of rich
flavor that these schnitzels have so I'm
gonna make a fennel which is one of my
favorite vegetables apple and carrot
slaw with some lemon juice and a few
herbs that will be amazing it would be
really rivaling just to cut through that
schnitzel so let's get these chopped up
I'm gonna be using a mandolin to get
them really fine but if you don't have
one of these to choose a sharp knife or
you can use a grater prepare the fennel
remove the bottom and the outer leaves
and give it a quick rinse I love fennel
so much I could eat this raw all day
people and a CD flavor and what will
work really well with it is some apple
because he's got the sweetness so I'm
just gonna slice that on a mandolin as
well please guys at home if you're using
a mandolin don't take your eyes off it
like I am sorry and use a guard if you
get too low so there's enough Apple
there let's get it into a mixing bowl
and also I'm going to do some carrots as
well

so this is going to discolor if you
don't add some lemon or another acidic
item quickly so I'm gonna get some lemon
on top and that's gonna freshen it up as
well and that right there is the perfect
side for the schnitzels oh but I also
have that amazing sauce to make as well
so let's get on with that so sauce is
next but I want to show you how quick
this sauce is that the schnitzels are
actually done I'm gonna get them out and
then I'll make the sauce in literally
two minutes maybe less so for the sauce
get a pan nice and hot and chopped ash a
lot really fine right for this herby
amazing sauce that's ready in no time
add some vegan butter to the pan with a
touch of oil and then add the shallot

next the pan add some sage leaves and
some rosemary

so the Smouse instantly with those herbs
straight into that vegan butter with the
shallot is epic epic is my new word I
use it all the time
nice bit of sea salt and some pepper all
of these flavors this sauce the crispy
schnitzel we've got the slaw all of
these different flavors will work so
well together now I'm gonna add some
capers smells too good and some of my
favorite samphire yes a rock samphire
it's a sea vegetable you can find it in
the marshlands by cliffs next to the sea
it's got an amazing crunchy texture
really really nice salty flavor not
overpowering but a nice decent salt
flavor taste of the sea basically and
it's really rich in antioxidants it's
great for you and you can find out all
good supermarkets these days it's one of
my favorite vegetables that adds so many
dishes that I make it's gonna add a nice
crunch a little bit of amazing saltiness
to this sauce as well as the capers so
I'm gonna add a touch of lemon now I'd
say about half a lemon so you got lovely
acidic beautiful flavors here herbiness
look at
okay time to plate out my favorite part
look at this crispness I'm gonna plate
this up now let's go I don't know why
I'm getting nervous about playing this
ever looks too good so on a slice this
I'm gonna made it angle

and because I've baked that tofu it's
firmed up and it's almost meaty get some
of us slaw on just on the side so the
lemon juice is actually just broken this
down slightly and made it a lot more
easy to sort of digest and chew on and
it's just we're helped all the flavors
as well trust me if you don't like
fennel just try like this I guarantee
you'll like it
my favorite part look at this this is so
so good so many amazing flavors in there
and it just need to go all over the
schnitzel now I think vegan cooking is
almost the New Age of cooking it's
modern cooking but this is very
traditional so this is modern no yeah
this is modern traditional almost I
don't even know that's a thing but that
is so beautiful perfect summertime food
but also if you wanted to do this in the
winter serve that schnitzel with
something a bit more hearty a bit more
substantial maybe some cooked vegetables
and it'll be nice in the winter time too
I cannot wait to see how crisp that is
and I can't wait to give it a taste it's
gonna be so good I think

hit that mmm and the tofu is so meaty
inside mm-hmm right some of the slaw is
well with a little bit a bit of the
carrot bit the fennel
bit the Apple that is an amazing dish
